Why Roast Date Matters and How to Tell If Yours Are Fresh

Why Roast Date Matters and How to Tell If Your Coffee Beans Are Fresh

TL;DR

Coffee is a fresh product. After roasting, beans release CO2 and volatile aromatics for about two weeks - that is your flavour window. Buy beans with a roast date (not just a best-before), look for bags with one-way valves, and store them in an airtight container away from light and heat. Fresh roasted coffee delivered directly from the roastery will always beat supermarket stock.

What Fresh Roasted Actually Means

Coffee does not arrive at the roastery ready to drink. Green coffee beans are stable for months, but the moment they hit the roaster, a clock starts ticking.

  • Green beans: Stable for 6-12 months if stored properly.
  • Peak flavour window: 3 days to 4 weeks after roasting.
  • Stale zone: After 6-8 weeks, most of the delicate aromatics are gone.
  • Degassing: Fresh roasted beans release CO2 for 24-72 hours - that is why espresso needs a brief rest, while filter coffee can be brewed almost immediately.

"Coffee is more perishable than bread and more fragile than wine. We just do not treat it that way."

The Flavour Window: When Fresh Beans Taste Best

Coffee flavour degrades through oxidation and the loss of volatile compounds. Timing matters.

  • Days 3-14: The sweet spot. Acidity, sweetness, and aromatics are at their peak.
  • Days 15-30: Still excellent, especially for darker roasts. Lighter roasts may taste flatter.
  • Days 30-60: Drinkable, but one-dimensional. The nuanced top notes have faded.
  • Beyond 60 days: You get bitterness and body, but little origin character remains.

How to Tell If Your Coffee Beans Are Fresh

Supermarket packaging often hides the truth. Here is what to look for:

  • Roast date, not best-before: A "best before" 12 months from now tells you nothing. Look for a specific roast date.
  • The bloom test: Pour hot water over grounds. Fresh coffee will puff up and bubble (the "bloom") as CO2 escapes. Stale coffee sits flat.
  • Aroma: Fresh beans smell intense - fruity, chocolatey, floral. Stale beans smell like cardboard or old walnuts.
  • Oil on surface: A light sheen on dark roasts is normal. Heavy oil on medium roasts often means the beans are past their prime.
  • Bag valve: One-way valves let CO2 out without letting oxygen in. If your bag inflates slightly, that is a good sign.

Why Buy Fresh Roasted Coffee Online?

If you live outside a major city, finding genuinely fresh coffee locally can be impossible. Buying directly from a roastery changes the equation.

  • Roast-to-door speed: Irish roasteries can deliver within 1-3 days of roasting.
  • Subscription rhythm: Regular deliveries mean you never run out during the peak window.
  • Traceability: You are buying from the source, not a distributor warehouse.
  • Seasonality: Direct roasters will tell you when new harvests arrive - something supermarkets never do.

Storing Your Beans to Keep Them Fresh

Even the best beans will die in a bad container.

  • Airtight is essential: Oxygen is the enemy. Use a container with a seal, or keep beans in the original valve bag pressed tight.
  • Avoid the fridge: Condensation kills coffee. Room temperature is better than cold and damp.
  • Grind last: Whole beans stay fresh 3-4 times longer than pre-ground coffee.
  • Buy what you will drink: A 250g bag consumed within two weeks beats a 1kg bag that sits for two months.
