Cherry Selection:

90%perfectly ripe (deep red)

5%semi-red, 5% overripe — calibrated for sugar balance

Hand picked from designated micro-plots within 10 km of Yaye

Collected in the afternoon (3–7 PM) to avoid early fermentation

 

Water Sorting: All cherries immersed in clean potable water

 

Drying:

300kg/bed, shade-net covered

Located in windier, cooler zone to slow drying 

Rotated regularly for 28 days

Final moisture target: 12%
